Caprese Salad

Yes, a salad that is 30% cheese. More importantly for those taking it easy, outside of handling the knife, there is literally nothing to do here. Just get your tomato, mozzarella, and basil in order and have a try.

The Tomato

Ultimately you want something nice, red, and flavorful. But for starters, get something round and easy to shape. Any grocery store’s vine ripened tomatoes will do the trick.

Mozzarella

In other recipes, there is the talk of wet versus dry mozzarella. Here, you absolutely want the went mozzarella. This usually comes in a bag, or in a ball, preserved in liquid. With only a trio of ingredients here you’ll want the taste of the fresh mozzarella.

The Greens

Fresh basil leaves are going to be the star of the show here. Cut them from a potted basil plant, or buy the fresh basil twigs. The smell alone will be worth hauling them around.

We’ll use the ingredients above, and top it with some seasoning for the grand finale.


What you’ll need

Serves 2-4 portions

  • 4-6 vine ripened tomatoes

  • 1 ball of fresh mozzarella cheese

  • Basil leaves (15-20 individual leaves)

  • Balsamic vinegar, olive oil

  • Salt and fresh black pepper

Lets Do This

  1. To make a balsamic reduction, heat some vinegar on medium-low heat until it begins to thicken, about 5 minutes. Put aside and let cool to room temperature. (Note: If you are using a balsamic reduction to start, skip this step)

  2. Thinly slice the tomatoes, discarding the top piece with the stem if necessary

  3. Thinly slice the mozzarella, aiming for a thickness similar to your tomatoes, but okay if it is slightly larger

  4. Tear of basil leaves into individual pieces

  5. Begin layering in either a straight line, or in a circle around the plate: tomato, mozzarella, basil. Keep this pattern going until the plate is out of space

  6. Sprinkle salt over the top of the salad, covering all parts. Grate the black pepper over. Lightly drizzle the balsamic over, and repeat with a touch of olive oil

  7. Serve as is, with a fork, or serve with bread
