Fresh Tagliatelle

Note this recipe leans heavily on our basic pasta dough. The focus here is to learn a thing or two on serving.

Now that you’ve got yourself some fresh pasta, what to do with it? First you’ll want to take that dough and pass it through your pasta maker’s cutting attachment.

What you’ll need

Servings depend on pasta used

  • Fresh tagliatelle

  • Sauce being served

  • Tablespoon of fat: butter or olive oil

  • Optional: Cheese or parsley to finish

Lets Do This

  1. Prep by heating sauce in a pan and bringing a pot of water to a boil. Add salt

  2. In the pot of salted boiling water, add tagliatelle and cook 60-90 seconds. Add an additional 30-60 seconds if frozen

  3. Remove the tagliatelle from the water, and place directly in the pan of heated sauce. Reserve 1/4 cup of pasta water

  4. Increase sauce heat to high and stir rapidly. Add in any fat (butter, oil) and continue stirring for 1 minute

  5. As sauce clings to pasta, it should begin to look silky. Remove from heat and stir in any cheese if using

  6. Using a large fork or carving fork and twirl the pasta, like in the movies, until you have a serving. Transfer to a plate to serve

  7. Top with any additional sauce, cheese, or parsley if using and serve


Remember, fresh pasta cooks within 30-60 seconds. If soft and chewy it likely needs to be shorter next time.
